WHAT IS THE KITCHEN?

The City of Buffalo has allocated eight hundred (800) square feet of space inside the historic Broadway Market to operate a commercial kitchen incubator. The objective of the Broadway Market's Commercial Kitchen is to position Buffalo as a center for local food entrepreneurship and food business. The Kitchen @ The Market is where new food entrepreneurs will be able to start their businesses, focusing on their product, without having to the bear high overhead costs. Chefs can rent space and time in the kitchen to prepare large catering orders, bottle or can foods for retail, and more!

Kitchen @ the Market FAQ



The Kitchen @ the Market was funded and constructed by the City of Buffalo. It is managed by the Westminster Economic Development Initiative, or WEDI, which also runs a microloan programand the West Side Bazaar, and supported by the Friends of the Broadway Market, a nonprofit group that supports promoting, preserving, and protecting the historic Broadway Market.

The Kitchen @ the Market is a licensed commercial kitchen available for rent by the hour to aspiring or existing entrepreneurs operating small scale catering, food trucks, or food processing companies. Clients can produce their products in a licensed and affordable environment, workingwith WEDI staff and other entrepreneurs to launch or grow their business.

The Kitchen @ the Market rental fees are based on the amount of hours a business plans to spend in the space. For businesses using the space at more than 10 hours per week, the rate is $15 perhour. For businesses using the space less than 10 hours per week, the current rate is $18 per hour. Invoices will come from the City of Buffalo, and all tenants will be billed monthly for use of the kitchen.

The Kitchen @ the Market is currently available for use from 6am to 6pm, Monday through Friday. On Saturday blocks of time are reserved for community programming and workshops. Please inquire with WEDI’s Kitchen @ the Market Manager for specific availability or questions regarding scheduling at kitchen@wedibuffalo.org.

Rent includes use of the kitchen only. It does not come with a space in the Broadway Market, and clients of the Kitchen @ the Market may not simultaneously rent a retail space in the Broadway Market. If you are interested in becoming a permanent or seasonal tenant of the Broadway Market, please contact market management.

Tenants will have access to the following: 3 bay sink and dishwasher, convection oven, conventional oven, 6 range gas stovetop, 30 quart mixer, refrigerator and freezer.Tenants are responsible for bringing their own utensils, products, and supplies. There is no permanent storage in the Kitchen @ the Market. Tenants can negotiate agreements with the Broadway Market for permanent on site storage.

The Kitchen @ the Market is a licensed commercial kitchen, meaning you can use it as an official production space for your business. WEDI is part of a large network of Community Development Financial Institutions [CDFI] and Economic Development organizations and work with our partners to provide financing for small businesses. WEDI also runs a number of workshops on small business ownership and operations, pairs clients with business mentors to work through some of the more complicated issues entrepreneurs face, helps with marketing and navigating bureaucracy, and has small business counselors who work with our loan recipients in a number of areas.


You can apply by doing one of the following:

1. Go to the WEDI website and fill out the online interest form for the Kitchen @ the Market to be contacted by a member of the WEDI team

2. Pick up a physical application at 999 Broadway, either from the Kitchen @ the Market orthe Broadway Market Management Office

3. Submit a physical application at our main office, at 436 Grant Street on the corner of Bird.

Please note that your business must have a business plan, insurance and all necessary permits andlicenses to operate in the kitchen. A member of our team can help walk you through theserequirements and direct you towards a bunch of free and amazing resources to help you throughthis process.

Spaces in the market are rented by the Broadway Market Manager and do not come with access to the Kitchen @ the Market. The kitchen may not be used by Broadway Market tenants. Kitchen @ the Market tenants do not have access to physical sales space within the Broadway Market.
